Easy, Quick & Simple Spicy Hot and Sour Soup Recipe

An easy and simple soup recipe known for its spice and sour taste. Generally, it is made with diced vegetables and Indochinese sauces and a fried noodles topping, but can also be made with a choice of meat.

Firstly, consistency is key for this recipe. The consistency should be thicker than water, but still not thick. Hence be careful with your corn starch addition step.

Secondly, the recipe should be served warm and it would not taste good when rested. Hence plan your soup accordingly and ideally serve just before the meal.

Lastly, when adding veggies to it, ensure to either slice it thinly or dice it in a small shape. This is due to the fact that we do not boil or cook the vegetables and just sauté it at high temperature.

INGREDIENTS

  • 2 tbsp oil
  • 2 clove garlic, finely chopped
  • 1-inch ginger, finely chopped
  • 1 chili, finely chopped
  • 2 tbsp spring onion, chopped
  • 1 carrot, finely chopped
  • 3 tbsp cabbage, finely chopped
  • ½ capsicum, finely chopped
  • 5 beans, finely chopped
  • 4 cup of water
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 tsp chili sauce
  • ½ tsp pepper powder
  • ½ tsp sugar
  • ½ tsp salt
  • 2 tbsp spring onion, chopped

FOR CORN FLOUR SLURRY:

  • 2 tbsp cornflour
  • ¼ cup of water

INSTRUCTIONS (METHOD)

  • firstly, in a large pan heat 2 tbsp oil and stir fry 2 clove garlic, 1-inch ginger, and 1 chili.
  • add 2 tbsp spring onion and stir fry until it softens.
  • further, add 1 carrot, 3 tbsp cabbage, ½ capsicum, and 5 beans.
  • stir fry for 2 minutes or until the veggies are half cooked.
  • add 4 cup water, 2 tbsp soy sauce, 2 tbsp vinegar, and 1 tsp chili sauce.
  • also, add ½ tsp pepper powder, ½ tsp sugar, and ½ tsp salt.
  • boil for 3 minutes or until the flavor is absorbed well.
  • now prepare cornflour slurry by mixing 2 tbsp cornflour in ¼ cup water.
  • pour the slurry into the soup and mix well.
  • continue to boil for 2 more minutes or until soup thickens slightly.
  • finally, add 2 tbsp spring onion and enjoy hot and sour soup.
